Sorto St. Andrea is characterized by compact and semi-pointed grains. It has a medium consistency after boiling. The rice cooks quickly, maintaining firmness and generally not overcooking. Due to the considerable amount of starch, it is suitable for preparing creamy dishes and soups. It is especially great for preparing creamy risottos, milk rice and similar dishes.
