Integral wheat flour contains all parts of the wheat grain, which gives it exceptional nutritional properties. With the crushed endosperm, it receives: energy through starch and proteins, with the shell provides dietary fibers and proteins, and through the crushed germ, essential fats and amino acids, as well as irreplaceable tocopherols known as vitamins of the E group.
Grinding on a specially adjusted millstone produces flour of the desired granulation with a small amount of mechanically damaged starch grains, which is of great importance in bakery production.
